The 30-Minute One-Pot Dinner Singapore Parents Actually Make
No complicated prep. No mountain of dishes. Just one pot, real ingredients, and dinner on the table before the kids melt down.
Tomato Egg Rice (番茄蛋炒饭风味)
A Singapore household staple reimagined as a complete one-pot meal — fluffy rice, silky scrambled eggs, and a tangy tomato sauce all cooked together. Kids love it. Leftovers reheat beautifully.
Serves: 3–4 | Total time: 30 minutes | Difficulty: Easy
What You Need
From the fridge / pantry:
- 2 cups jasmine rice, rinsed
- 3 medium tomatoes, cut into wedges
- 4 eggs, beaten
- 3 cloves garlic, minced
- 2 stalks spring onion, sliced (whites and greens separated)
- 2½ cups water or chicken stock
Sauces (all from NTUC / Giant):
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1 tsp sugar
- ½ tsp white pepper
To cook:
- 2 tbsp cooking oil
How to Make It
1. Sauté the base (5 min) Heat oil in a medium pot or deep pan over medium-high heat. Add garlic and spring onion whites. Stir for 30 seconds until fragrant. Add tomato wedges and cook 2–3 minutes, pressing lightly so they break down and release their juices.
2. Season and add rice (2 min) Add soy sauce, oyster sauce, sugar, and white pepper. Stir to combine. Add the rinsed rice and mix well so every grain is coated in the tomato base.
3. Cook the rice (15 min) Pour in water or stock. Bring to a boil, then reduce heat to low. Cover and cook for 12–13 minutes until rice has absorbed all the liquid.
4. Add the eggs (5 min) Make a well in the centre of the rice. Pour in the beaten eggs. Let them sit for 30 seconds, then gently fold through the rice — you want big, soft ribbons of egg, not dry scrambled bits. Cover and cook on the lowest heat for another 2 minutes.
5. Finish and serve Drizzle sesame oil over. Scatter spring onion greens on top. Serve straight from the pot.
Swap It Your Way
- No fresh tomatoes? Use one 400g can of diced tomatoes — add less water (reduce to 2 cups)
- Add protein: Toss in sliced chicken breast or luncheon meat at Step 2 before adding rice
- Make it spicy: Add 1 tsp chilli oil or a sliced chilli padi at Step 1
- Veggie boost: Add frozen peas or corn at Step 3 — no chopping needed
